I used dia for doing such diagrams for a computer architecture class
last semester. I didn't have much trouble with it (actually, I've been
using it for years for all sorts of diagrams).
Still, you might prefer kivio or openoffice's draw. And a friend of mine
really likes inkscape for general diagramming.
