Hi Dotan,
I don't know about Dovecot but I am using Cyrus-IMAP and I just tested
the creation of a Hebrew folder name with no problem.
As for the need for Postfix or any other SMTP server. Postfix is used
to move email between servers while the IMAP server is used to access
your email from your client (POP3 is another way to access your email).
If I remember correctly, Postfix will not grab your POP3 email from your
ISP. You will need to use another program (fetchmail). Fetchmail will
collect the mail from the ISP's POP3 or IMAP server and deliver it to
your SMTP server which in turn will deliver it to your IMAP server.
