eth assignments question

I recently start using Ubuntu, actually I use Ubuntu at my Office, FC5
on my Home Desktop and Centos on my laptop :)
I could see that with ubuntu the eth0 becomes eth1 and the eth1
becomes eth0 comparing with FC5 or Centos.
