Just a guess... no idea if these include Chinese fonts:

 $ apt-cache search java font | grep sun
sun-java5-fonts - Lucida TrueType fonts (from the Sun JRE)

I'm guessing Lucida is only a western font set though ...

apt-cache search fonts chinese

might help too ?

Google has over 25 000 hits for " jedit chinese fonts " , in case you want
to consult the oracle :)
