I see no barrier to installing a gnome desktop on top of the server
install, if that's what you want. You should be able to do so with one
command:

sudo apt-get install ubuntu-desktop

You will either need a good internet connection ( broadband) or an Ubuntu
install CD, which you can add to your sources using

sudo apt-cdrom add
