It will only remove the metapackage, not everything that came in with
it.

If you use aptitude instead of apt-get it will remember the dependencies
and remove them with the package.

Another option is to use debfoster.

Or in this case you could remove libqt3-mt, which would be the lowest
level dependency that isn't a dependency of ubuntu-desktop.  Not a great
option if you have some QT apps installed (eg. k3b or skype).
