Upgrading to Dapper

Please excuse a rather naïve question.

Are the Dapper "flight" ISOs just snapshots of development at that
particular time?

If I upgrade a 5.10 installation by changing the distro name in
sources.list and doing an apt-get dist-upgrade, will I get a
particular "flight" revision or will I just get whatever is the
current state?
