dhcp configuration [hoary]

If you skip the [configure network now] option during installation,
it says you can configure it later. My question is: how do you configure
dhcp later? (Searching wiki.ubuntu.com and www.ubuntu.com for "dhcp" or
"dhclient" found nothing useful, which I find surprising.)
I can access the gnome menu [system > Administration > networking] and
set eth0 to use DHCP. Is this enough?
My second related question is, what is the actual sequence of scripts or
commands which lead from the init.d script to the dhcp daemon/dhclient
commands, and their relationship to ifup/ifdown?
