Owner and permissions of /var/mail/me

I wouldn't trust the method that requires you to touch
/var/mail/carthik, then set the permissions on your own; if
possible, you should let the system create the file for you
and set the permissions. So I'd start over: delete
/var/mail/carthik, then again do

echo test |mail carthik

and see what happens. There's no reason why it shouldn't go
through.

The logfiles that you're looking for, I believe, are in
/var/log/mail.log. When I just now did the 'echo test'
trick, the following lines showed up in my log:

Sep  1 11:38:35 TheloniousMonk postfix/local[12238]: 9B206123A0C: to=<slaniel at TheloniousMonk.laniels.org>, orig_to=<slaniel>, relay=local, delay=0, status=sent (delivered to command: procmail -a "$EXTENSION")
Sep  1 11:38:35 TheloniousMonk postfix/qmgr[7740]: 9B206123A0C: removed
