Different Defaults

So this has been getting to me recently.  I am using firefox and want to 
view a .pdf file.  Nothing too odd yet.  Well sometimes when it asks if 
I want to open it now or download it I will get a:

/usr/bin/xpdf (Default)
and some other times a
/usr/bin/evince (Default)

It is random it seems.  Why is it reporting 2 defaults, and when one is 
shown that the drop-down box does not have the other to select?
