There are many reasons to break up your filesytem. Here are a few.
You can use interesting mount options on a per-partition basis, such as no-suid and no-exec on user home directories, You can use partitions to keep users from filling up your system drive. You can mount a different drive as the log or spool directory for performance reasons.
You do have to plan ahead a little more, although LVM gives you more flexibility after you figure it out.
