Disabling kate

"Disable" Kate?  Uhhh.. "sudo apt-get remove kate" should "disable" it
quite nicely... ;-)

I'm not in KDE right now so I can't recall the exact wording, but I
recall you can right click on a file and there is something on the menu
on the order of "open with" or "open with other application".   Select
that and a box will pop where you can either type in your application of
choice or point and click your way to it via the menu.

Below that is a box that says something like "always use this
application to open this type of file" (or similar).  Check that box and
the app you pick (e.g. Leafpad) will always open that file type (e.g a
text file) by default.
