The easiest way to do this is to unplug the Ubuntu drive when you put in
the second (WinXP) drive.  Go through the normal install for Windows.
When that is complete, reattach your first drive and ensure that it is
master (hda) and the second drive is slave (hdb if on the same, primary,
ide bus).

Reboot.  Should boot into Ubuntu.  Go in and reconfigure grub to
recognize WinXP on the second drive.
