How do I un-subcribe to this list?

From the headers of every e-mail:

List-Unsubscribe:
<http://lists.ubuntu.com/mailman/listinfo/ubuntu-users>,
        <mailto:ubuntu-users-request at lists.ubuntu.com?subject=unsubscribe>

So sending an e-mail to ubuntu-users-request with as subject unsubscrube
will do the trick.
