I don't know about /home and the ubuntu install specifically, but what I
usually do is:
1. /home lives on /dev/hdb3
2. exclude that partition from formatting
3. install.
4. as root, delete the empty /home partition, then edit fstab to mount home
at /dev/hdb3.
5. remount /home
