I'm using ubuntu only at home, got to live in my job with windows. But 
if I would be working
with ubuntu or any other linux in work our administrators should be able 
to do:

-Know differences of Filesystems
-Install a system, including OOffice,.... via CD,NFS,etc.
-Define a security policy
-Setup user accounts and acess rights
-Shell scripting (set up individual consoles)
-Setup Samba & Client
-Setup ssh Directory Server's
-Setup Cups Server and Client
-Install and setup a firewall
-Tunnel communication using ssh, ipsec,...
-Setup wpa supplicant
-Setup individual Windowmmanager's
-Setup KiosK systems (limited user rights)
-Mesure performance and stability of Applications (e.g.:Memory leak in 
Firefox)
-run automatic backup
-setup virus scan - server
-Setup Web server
-Setup Mail server
-Setup raid systems
-Secure Laptop-system
-Do Portscanning,Wlan Monitoring,.... Use and understand ethereal
-setup network grid's

.
.

I always said setup, but meant also system care and securing the whole 
thing. This list is sure not comlete, but will be continued if I can 
think of anything else,
