My vote goes for MoinMoin like others have suggested.  Depending what
your looking for you can create a simple personal wiki without using
Apache (just uses python) to a full blown quick multi-user effort with
apache/IIS, etc.

There is also a personal Windows version which is just a .exe file so
your non-linux friends can easily create a wiki of there own.  The
different platforms both use the same structure so the wiki data can be
swapped, etc.

The Ubuntu wiki uses MoinMoin, and there's a setup guide on there as
