I have recently dealt with similar issues - actually moving my mail
from an old version of evolution to evol. 2 in another linux
installation. I definitely did it the hard way but learned a bit in
the process. Am also going to be moving some outlook express mail and
addresses in the next couple of days.
I found a couple of references that might help. This one is older but

In summary it appears that you export the mail files from OE and then
import them into Mozilla mail (under windows) and then export them in a
format that evolution can use. The article listed below mentions
mounting the windows partition to move them but I can't see why you
couldn't copy the resulting files to diskette or cd and migrating them
if you aren't networked.

It appears that you will have to export the address book as a .csv
file and convert it to a format that evolution can use. I used
csv2vcard and found that it worked great. You can find it here:

Sorry I cannot give you a really straighforward 1,2,3 method, but I
hope that this helps you out.
