There are many components of varying licenses in *every* distribution. There
is *no* completely GPL-licensed distribution (it's simply not possible). If
Novell charge for service and support - as Canonical does! - that's up to
them, and has nothing to do with the GPL (and most other FOSS licenses).

*You* can verify the accuracy of your statements by looking at the code, and
looking at the license information that comes with the packages. In Debian
and Ubuntu, you will always find it under /usr/share/doc/<package>/copyright
Evolution, as released already, will always be available under the GPL. You
can't put the genie back in the bottle.
