in gconf-editor: /desktop/gnome/application/window_manager

i didn't tried it, but i think if you install E as part of the 
gnome-session, you click in exit in the E menu and only E finish, may be you 
stay without wm or E will be restarted...

i prefer to make my own .xsession script
