The command is

sudo dpkg-reconfigure xserver-xfree86

Once this is started you get a series of options to choose or questions
to answer (much like the warty installer style). It's really quite easy.
The only input I have to add is to set the amount of available video RAM
and the highest desired screen res, the command does the rest.
Worth a try.
Once done, you need to reboot. There may be an easy "restart the xserver
without rebooting" command but I don't know it.
