[Hoary]: defining new K/B shortcuts

I have tired to redefine a few keyboard shortcuts with Hoary, as it is
now possible.

I did like I was told to do earlier on this list :

I go to  "System > Preferences > Menus & Toolbars", I tick that new
great option : "Editable Menu Accelertors". Then I open, say, Nautilus,
I open the "View" menu, then put my mouse cursor over the "Show hidden
files" option. Then I press the keystrokes I am interested in, in this
case, "Control + H". Instantly, "Ctrl + H" appears in the menu, and I
can use it, it works. But, after a few days (probably because of a
reboot ?), Nautilus removed my shortcut ! It doens't work anymore, and
doesn't appear in the menu anymore, it's just plain gone ! :-O

Same for the "Eye of Gnome". I redefined the shortcut to zoom-in and
out. But as soon as I close it and re-open it, it has forgotten my
custom shortcut. 

I would like this feature to work, as many shortcuts are useless for me
in Gnome and many apps, they seem to be designed/optimized for English
K/B layout, but with my French layout, it often leads to impractical or
inconsistant key combinations :-/ What am I doing wrong  ? Or is this a
bug again ?
