I can think of two methods:

1. You can subscribe with username at mydomain and set the Mailman options
to not deliver mail to that address.

2. You could set up a custom header in ~/.muttrc like

my_hdr From: subscribed_address at subscribed_domain

You might be able to use a return-hook to customize this for different 
lists.
