bloated setup?

Hi all, I have been using ubuntu for some time, since hoary, but still
think of myself as a linux noob.  I would like to know if there are
certain things that are installed/activated in the default set up that
can be turned off and not effect my day to day activities.  I have a
fast comp, 3.2 Ghz, 1Gb ram, but I just feel like there are alot of
things running that dont need to be.  Plus it would be nice to find out
what alot of these things are/do.  I basically use my computer for
internet use, IM, music, movies.  Nothing too hardcore.  Is there some
guide or list that tells me what does what on my process list so I can
deactivate some things?  Is there a list I should print out and attach
so the mailing list can see what I have running?  Thanks
