Stop interfaces from autoconfig, and have more than one profile

I'm currently dealing with my network subsystem, and I'm unsure how to
perform some tasks in the "right" (ie. supported, not likely to break
stuff) way.
First, how do I turn off the automagic enabling of eth0 when booting or
waking up from sleep? A lot of the time, I use either wireless or have
no network at all. It is specifically a problem for wireless use since I
need to either kill ifup and related tasks, or wait for upwards of a
minute before being able to configure the wireless interface.
Second, is there a neat way to have more than one wireless interface
profile, so I could use my WEP encrypted profile at home, and use
insecure (but convenient) public networks elsewhere? At this point I
have two different /etc/network/interfaces files and rename them as
needed but that is a bit inconvenient to say the least.
I'd like to hear how other people have dealt with these two issues.
