OK.  Lets go back a bit and do this one step at a time.  What file type
are you trying to get working?

Let's say you don't want to use evince for viewing pdf's.  You would
uncheck the default action and then attempt to display a pdf.  That
should now bring up a selection option asking if you want to use evince
or another program.  You would browse the filesystem until you found the
program you wanted to use, like xpdf.  (Hint:  Open a terminal and enter
'which xpdf'.  This will give you the path to xpdf: /usr/bin/xpdf)

Select the option to always use this program for this filetype and you
should be good to go.

Note that you need to know which program you wish to use for each filetype.
