It replaces totem-gstreamer not the gstreamer libraries themselves,
other apps like rythmbox still use gstreamer regardless of what totem
is using.

Yes. They can not both be installed at the same time. The binary app
are both "totem" but one is complied against gstreamer and the other
against xine-libs.

They both do the same thing but xine is more mature than gstreamer at
the moment. Various apps use one or the other, and some use different
ones still.
