The installer either puts the files in the wrong place or links it
incorrectly.
Try this
sudo ln -s /usr/local/Adobe/Acrobat7.0/bin/acroread /usr/bin/

and then

sudo chmod 755 /usr/bin/acroread

Then try to start it as normal.
