editing Applications menu, and the 'universe'

Hello,
I'm pretty new using Ubuntu and Gnome for that matter. I've run into an
issue the wiki wasn't able to fix. I'd like to customize the App. menu
to include a catagory, "science", as I use alot of R and TeX and others.
I am wondering if there is anyone whose been sucessful at getting
programs out of the universe to appear in the menu.
I've tried going into Nautilus and hitting crtr-l and them typing
applications:/// , as the wiki states, but I'm returned an error
"applications:///" not a valid location
please check the spelling and try again
which means I'm basically stuck. I know I can always add launchers to
the Menu bar, but that getts pretty crowded and I'd like just to have
them fall into a menu. Other than that - I'm happy with Ubuntu -
its usuability is excellent, and other than a few quirks I liked about
window maker, Gnome has won me over.
