Hi,

always have a look at the email-source, good mailinglist-admins add 
additional headers on how to subscribe/unsubscribe from the list:

List-Unsubscribe: <http://lists.ubuntu.com/mailman/listinfo/ubuntu-users>,
<mailto:ubuntu-users-request at lists.ubuntu.com?subject=unsubscribe>

So simply send a mail with subject

unsubscribe

to

ubuntu-users-request at lists.ubuntu.com
