The general form is

  apt-ftparchive sources <path/to/packages> | gzip -9 > Sources.gz
  apt-ftparchive packages <path/to/packages> | gzip -9 > Sources.gz
  apt-ftparchive release <path/to/packages> | gzip -9 > Sources.gz
