How to get ubuntu to not start X on boot

Will I be able to start X again at some point if I need to?

Easiest solution:
apt-get remove --purge gdm
If, for some reason, you don't want to remove gdm (even though that's
standard practice on Debian systems):
update-rc.d -f gdm remove
