Go to:
http://lists.ubuntu.com/mailman/listinfo/ubuntu-users
and go down to the very bottom of the page.
Fill in your email address and click the 'unsubscribe or edit options' 
button

Note to admins:
The unsubscribe option is rather obscured by being under the 
subscribers list - an option for the list admin(s) only. Could this be 
tidied up?
