Thank you all for your great suggestions!

* PHPMyAdmin: I've used this before -- and continue to use it now, when I'm
not at my workstation. It works great and has tons of features, but a
non-web-based client is simply faster on my own computer.

* Mergeant: While it installs fine and looks great thanks to its Gnome2
heritage, I can't get it to connect to my mySQL databases. It feels
"incomplete." I'll be watching this one closely, though, since I have a
feeling it'll be the best one in the future.

* Rekall: Rekall looks like it is made for designing GUI frontends usable by
endusers, not for quick table edits by the DBA. Looks like it'll be a cool
replacement for Access in the future, though.

* mysql-navigator: Connects fine, but I don't like the MDI interface or the
fact that most everything still requires entering SQL statements. Is this
an ancestor of the mysqlcc app? It shares a certain familiarity.

* mysqlcc: This works great! The interface is more complex than Cocoa MySQL,
but it does appear to do everything I need it to do, including editing and
  creating tables.

Thanks again for all the suggestions! I'm going to be digging into mysqlcc
for the next couple of days to make sure it fits my needs.

Take care,
