Anyone know how to remaster the CD with previous images?

Since I'm new to Debian based distros, can you give me some pointers to 
the best sources to learn about creating and patching .debs etc.? I'll 
swat up on the man pages etc. and I guess there will be a load of stuff 
on the Debian site but a few pointers to the right places to start 
looking would be welcome.
