Try and see the performane for yourself. The Pentium will work for sure,
the Mac probably too. Work means it will boot, not that you will be fast
with Gnome 2.8 at those processor speeds and memory sizes.

So if the question is whether I would recommend Ubuntu for these antique
boxes, the answer is no.
