CUPS localhost:631 versus GNOME page size

OK, normally I use the CUPS web page admin thing so I've never seen this 
issue before until Ubuntu forced me to use the GNOME printer manager 
(which is nice because it's easier to use).

Setting the page size in the GNOME printer settings seems to do nothing at 
all.  It never actually changes the page size and printing stuff comes out 
all wrong.  There appears to be two settings, one under "Paper" and 
another under "Advanced".  Neither one seems to have any effect.  And in 
fact, setting the page size in the application (like Firefox) also seems 
to have no effect.

If I go into the CUPS web admin (after re-enabling the admin functions) I 
can see that the page size has not been changed.  Changing the page size 
from the web-based admin fixes the problem (if I only care to use one page 
size) but I still can't seem to change it on the fly while printing from 
an application.

Anyone else seen this?  Is this a configuration problem, Ubuntu problem, 
something with GNOME, or ... ?

The printer I was testing with is a HP LaserJet 1200 (USB).  Changing the 
driver appeared to have no effect on page size settings.
