Is there any particular reason you'd want to?
If Evolution is not running:
You can access your appointments and tasks by simply clicking on the
clock, and browsing them there;
Any alarms or reminders you have set will still pop up on screen;
You can access your contacts and send e-mail to them by adding the
"Address Book Search" applet to your panel;
You can be informed of new mail by adding an "Input Monitor" applet to
your panel.
