Ubuntu live CD

I just booted from the Ubuntu live CD.  Got online with zero hassle.  I
am always a little nonplussed by live CDs, since I can't save mail or
anything else from session to session, it doesn't seem to be much
incentive for trying anything serious.  But it's good to get a look at
the new Gnome and the new Evolution 2.0.1.

Can somebody tell me if there is any way to save settings from session
to session for e-mail, IM clients, etc.?  Seems a pain to have to
re-enter that every time.
