apt-get remove xserver-xfree86
(don't take my word for the package name.. I could be wrong).
I think you will find it will remove all the packages that depend on X,
including Gnome.

I did this on a Debian Sarge box recently.. worked a treat .. it's now a
server! Of course... installing without X would be better.. but what the
hell.
