How to recompile ubuntu kernel

Rock and Roll. I had a hiccup though. It looks like the default kernel
that Ubuntu gave me was 2.6.8 for i386. Looking at the kernel options
I have in synaptic, I don't see one specifically that says 2.6.8 - so
I chose "kernel-image-2.6.7-1-686-smp 2.6.7-1ubuntu2".

As you said, it added the stuff to the grub menu (awesome). When I
rebooted and selected that new kernel though, my system appears to
hang and do nothing for about 5 minutes at the step "Starting Ubuntu"
(I think that's what it was) - right near the beginning.

Should I have chosen the package "kernel-image-2.6-686-smp"? Now that
I look at the descriptions again, it appears like this package may
always be the "latest" as mentioned in it's description - "This
package will always depend on the latest 2.6 kernel image available
for Pentium Pro/Celeron/Pentium II/Pentium III/Pentium IV with SMP
support."

I don't really want to compile a custom kernel, and I don't think
there's a need to, but something must have been different in that
other kernel I tried besides being optimized for a P4 w/HT. I could
just be blowing a lot of hot air too. If that's the case, just slap me
and give me a "do this and shut up" kinda answer. :-)
