LANGUAGE environment variable

Ok, I could probably find this myself fairly easily, but I'm lazy and
have been super busy lately with other things.  Anyway, I happened to
notice that the LANGUAGE environment variable has the following listed:

> en_GB:en_US:en

So how do I change it?  I KNOW it's buried somewhere. ;)  that en_GB entry
is making CrossoverOffice think I'm a European and formatting my dates wrong
in Quicken. Not a good thing, especially when I try to go print checks I figure.
