Add vga=nnn to your kernel boot parameters in /boot/grub/menu.lst, where nnn is
the appropriate value for your particular setup.

I use vga=788 on my system to get a 800x600 console.

(the samples are for a LILO configuration, but the vga=nnn values are the same
in GRUB)
