Removing Ubuntu Desktop Packages

Hi,

had Debian sid installed on my privious laptop, now I have a new one and
didn't want do spend al lot of time configuring it. I found Ubuntu and I'm
very happy with it, except for some issues:

In debian the gnome-panel does not depend on evolution-data-server. I
don't use evolution and what to remove it but can't :( Is there any way to
do this?

When I installed ubuntu I also noticed that it ocupied a lot of disk space
1.5GB, I started searching for the problem and found many similar packages
that people usually use one of them(eg: vim and emacs). Are you planning
to solve this for hoary?
