fonts configuration in openoffice

How does one do this (I'm using Hoary)? If I fire up spadmin, as it
recommends in the oOo help, I get only a printer setup dialog - no
mention of fonts.

I've installed ttf-gentium from multiverse, and it seems to have
installed successfully. When I go to use it in Impress in character
formatting, it says "This font style will be simulated or the closest
matching style will be used". Same with some other corporate-specific
fonts I installed from an rpm via alien.
