Then after login as a user you can type 'startx', or as root
'/etc/init.d/gdm start' this will start a single X session or a full blown
displaymanager respectively

You could also make runlevel 3 start with gdm, and runlevel 2 without (this
are the /etc/rc<runlevel>.d directories of startup-scripts). Then just add
another entry to your (indeed) menu.lst identical to your default entry with
only a '3' added to the kernel line, this will tell init to switch to
runlevel 3 instead of the default of runlevel 2.
