You simply select the mplayer-686 (or whatever your sub-arch is) package and
Synaptic should install the latest version; if it doesn't, you could use
"Force version" and manually select the one from hoary.

They are enabled both: Ubuntu allows you to run a mix of Warty and Hoary at
the same time. See also https://www.ubuntulinux.org/wiki/PinningHowto.
You don't need to disable anything, neither you risk to install unstable
packages: since  you only added the multiverse component from Hoary, you can
only get Hoary packages which belong to multiverse (= non free and
unsupported anyway).

It looks that the mplayer package depend on library versions not newer than
those in Warty, so the package should install smoothly. If you really get
missing dependencies, etc. and can't install, you could download the source
package ("apt-get source mplayer"), build it ("cd mplayer-1.0-pre5 &&
dpkg-buildpackage -rfakeroot", optionally "apt-get build-dep mplayer" if the
above fails) and install the resulting deb.
