How stable is hoary, really?

It's not neccessarily all-or-nothing.

You can add the Hoary repository to your sources along with warty's and
do an update.  Then just install the packages you want.  It will usually
only install the dependancies you need and not break _everyting_, just a
few things (if they are broken in Hoary...)

It certainly won't be as broken as if you did a dist-upgrade.
