i like mediawiki, the wiki software wikipedia is using. i guess there is 
no ubuntu package, but it's not needed, as it's only some php scripts 
you put in you public_html folder. it's very easy to install. what i 
didn't test, but looks promising is instiki (instiki.org), but this has 
no mysql backend.
