I'd say seven point ten or seven ten are appropriate (although seven ten
would mean 710 to me).  Canonical refers to Ubuntu releases by version
number - the code names are just for reference and are only used in
sources.list.

Personally, I typically refer to the short code name (i.e. Gutsy rather
than Gutsy Gibbon).
